The wine

The Vinum Nobis DOCG Barolo Cannubi is a 100% unique wine, also the flagship of Vinum Nobis. The Cannubi vineyards are special and loved. Of the total Barolo DOCG wine area is only 15 ha of Cannubi. The cru Cannubi was already a household name long before the wine bar Barolo became known. It was the first cru ever in Italy. The oldest bottles with the name Cannubi date from 1752! and are housed in the Barolo museum. The Barolo Cannubi wine is made from grapes that originate exclusively from the “holy” Cannubi vineyard in the village of Barolo. The result is a complex but elegant wine that is both delicate and harmonious on the one hand and robust and robust on the other. The grapes

The Nebbiolo is a blue grape, naturally with a white haze that lies over the grapes like a low-hanging mist. The Nebbiolo grape requires a lot of attention and is choosy about its place of growth. A calcareous soil and sunny slopes are ingredients for the successful development of this grape. Nebbiolo grapes require a long ripening process and require a lot of sun hours. After heavy effort the Nebbiolo grape forms a nice basis for the Vinum Nobis Barolo. Around the village of Barolo (Piedmont) lies the specific “Cannubi” wine-growing region, the birthplace for the nebbi-grape for the Vinum Nobis Barolo. With respect for nature, the ripe grape bunches are manually selected and harvested.

Production

Luigi Einaudi is a leading family business: a winery that produces prize-winning Barolo wines. Vinum Nobis consciously chooses tradition, small-scale production and good quality. We entrust the grape bunches of the Cannubi vineyard to Vinum Nobis to the Einaudi family. With their rich history of producing wine, they know how to produce the finest Vinum Nobis cru Barolo Cannubi, 100% unique. During the fermentation, “pigeage” is used twice a day. This is a technique where the “hat” of supernatants is submerged by hand. This technique ensures that the taste and concentration of the grapes are released in a homogeneous manner. The floating-hat fermentation of the Nebbiolo grapes from Vinum Nobis takes 7 to 8 days and the temperature is strictly controlled between 28/30 ° C. After the malolactic fermentation the wine is transferred and further raised in a combination of new, used barriques and large oak fodder. Vinum Nobis opts for the retention of terroir expression whereby the wood tests must not dominate.
